Indian inspired dish. Not a traditional Indian dish but similar to Korma.

Recipe Ingredients for Terra's Veggie Korma

3 cups Cauliflower, separated into flowrettes
2 medium zuccini, sliced and quartered
1 small onion, chopped
2 Peppers, Jalapeno, chopped
1/2 large green bell pepper, chopped
3 cloves garlic, diced
3 tablespoons olive oil
12 ounce Lite Coconut Milk
1/2 cup Heavy Whipping Cream
8 ounce tomato sauce
1 cup frozen lima beans
1 cup frozen peas and carrots
5 tablespoons Curry Powder
1 tablespoon Ground Ginger
1/2 tablespoon Salt

Recipe Directions for Terra's Veggie Korma

  1. Heat oil over medium heat.

  2. Add zuccini, bell pepper, jalapeno and cauliflower.

  3. Saute for 10 minutes.

  4. Add onion and garlic.

  5. Cook an additional 5 minutes or until onion is translucent.

  6. Reduce heat to low.

  7. Add curry powder, ginger and salt.

  8. Cook 5 minutes.

  9. Slowly stir in Lite Coconut milk.

  10. Add lima beans, tomato sauce, heavy whipping cream, and peas and carrots.

  11. Cook for 15 minutes or until brought to a simmer.

  12. Serve with Rice or Nan.
