Lots and lots of lovely veg, marinated and stir-fried in teriyaki sauce. Serve with rice or (rice) noodles

Recipe Ingredients for teriyaki vegetables

300 g green beans
150 g sugar snap peas
1 yellow pepper, sliced
1 red pepper, sliced
300 g broccoli, florettes
2 courgettes, halved and sliced
175 g baby corn
5 cloves garlic, sliced
150 g mushrooms
150 ml teriyaki sauce
2 cups rice

Recipe Directions for teriyaki vegetables

  1. slice, dice, quarter and cut the veg to bite-size chunks

  2. Marinate in the teriyaki sauce (I leave it overnight)

  3. Stir-fry in a wok as you boil/steam rice or noodles
