Recipe Ingredients for teriyaki stir fry

200 g buckwheat noodles
1/4 pt soy sauce
1/4 pt rice wine
1 tbsp honey
1 green pepper
250 g broccoli
100 g chanterelle mushrooms
200 g mushrooms
1 red chilli pepper
4 cloves garlic
100 g beansprouts
20 g ginger
250 g salmon fillet (can be bought frozen and then defrosted to cut costs)

Recipe Directions for teriyaki stir fry

  1. mix together soy sauce, mirrin (rice wine) and honey to make a sweet, sticky wonderfully yummy marinade. Add some sesame seed oil if you like.

  2. remove the seeds from the chilli pepper and finely slice - remember to was your hands afterwards or you'll regret it!. Peel and slice the cloves of garlic. Peel and slice the fresh ginger. Add garlic, ginger and chilli pepper to marinade

  3. chop and slice all vegetables and the salmon into ready-to-eat chunks, and leave in marinade for at least 10 minutes, or however long you want to spend having a light refreshment with your guests.

  4. Stir fry in a large-ish wok on high heat. This should only be for about ten-15 minutes, but I would advise to taste for yourself - it depends on how crispy you like your veg.

  5. Meanwhile, put buckwheat noodles in pan with boiling water, leave to soften for about 4 minutes (or longer if stated on packaging), then drain and add to stir fry.

  6. I like to eat this from a bowl as it can turn out a bit soupy.
