Teriyake Sauce homemade with Shitake broth

Recipe Ingredients for Teriyaki Sauce

1/3 c soy sauce low sodium
1/3 c mirin
1/2 c water
10 g Shitake Mushroom stems
1 T garlic
1 T ginger root
1/2 t pepper
1 T sesame oil
2 T cornstarch
1/4 c water

Recipe Directions for Teriyaki Sauce

  1. Microwave the water with the shitake stems (minced) until boiling

  2. Saute the minced garlic and grated ginger root in half the oil for a minute or so - do not burn

  3. In a bowl mix the soy sauce, the mirin, the remaining oil, and the pepper (white was called for in the original recipe, but I used black. If I had family that could the spice, I would have used red pepper flakes instead)

  4. Add to the sauted garlic and ginger root

  5. Bring to boil and let boil for a minute or two

  6. Mix the cornstarch and water together until smoooth and no lumps

  7. While whisking the soy mixture in the pot, gradually stream in the cornstarch slurry

  8. Bring back to a slow boil and simmer for a minute or two, stirring constantly until thickened.

  9. Half of this recipe was used to flavor 14c of stir fry veggies and cook noodles in the resulting leftover liquids.

  10. A serving would have covered a cup of veggies and roughly 1/2 c noodles.
