Teriyaki Salmon Recipe

Easy and fresh taste--good for non fish lovers. Note: If you can't find rice wine, apple sauce will do.

Recipe Ingredients for Teriyaki Salmon

1/3 c reduced sodium soy sauce
2 T mirin (rice wine)
2 T chopped green onion
2 tsp grated fresh ginger
2 T honey
3 T lemon juice
16 oz. salmon (4 steaks)

Recipe Directions for Teriyaki Salmon

  1. In resealable plastic storage bag, combine first 6 ingredients, then add salmon. Note: to increase marinating effectiveness, I have the butcher remove the "skin" of the salmon before I marinate, even though it cooks off easily if you grill the fish.

  2. Refrigerate for 30 minute up to 24 hours, turning on occasion.

  3. Preheat broiler or grill, depending where you live.

  4. Put marinade in saucepan and bring to boil over medium high heat, stirring occasionally until reduced by half (about 8 minutes).

  5. Meanwhile, broil fish 4" from flame--or grill outside if you can.Spoon marinade over fish before serving.
