Bay scallops, pineapple, and carrots grilled in a teriyaki/pineapple marinade

Recipe Ingredients for Teriyaki and Pineapple Grilled Scallops

4 oz raw scallops
1/3 cup pineapple chunks
1/3 cup carrots
1 tbsp Teriyaki

Recipe Directions for Teriyaki and Pineapple Grilled Scallops

  1. Mix frozen scallops, pineapple chunks (with juice!), carrot slices (I use baby carrots, cut into small circles), and teriyaki sauce either in a bag or bowl. The mixture doesn't have to marinade long, it's all going on the grill anyway.

  2. Make a "boat" out of aluminum foil. This will be put on the grill, so make it pretty sturdy (double layer bottom, sealed corners, high sides, etc).

  3. Turn on the grill and let it heat up some before putting on the boat.

  4. Put the scallops mixture into the boat (check for leaks!), and put the boat on the grill. Yes, "boat" is the technical term :)

  5. Grill until the scallops begin to curl at the edges. Cut one open to be sure it's thoroughly cooked. They will keep cooking after you take them off the heat, but I like to be sure.

  6. I usually eat this with a piece of grill toast (another technical term!) and baby spinach/tomato salad. This is a big summer favorite of mine!
