Recipe Ingredients for Teriyaki Chicken Noodles

7 ounces noodles, somen
1/2 cup water
8 tablespoons soy sauce
6 tablespoons wine, rice (mirin)
4 teaspoons brown sugar
4 tablespoons canola oil
24 ounces chicken breast, cut into pieces
2 carrots, julienned
1 pound bok choy, chopped (one bunch)
4 teaspoons ginger, grated
2 scallions, sliced
4 teaspoons cornstarch, mixed with water

Recipe Directions for Teriyaki Chicken Noodles

  1. Cook noodles following package directions.

  2. Mix together water, soy sauce, rice wine, and brown sugar in a bowl, set aside.

  3. In a wok, add 2 tablepoons of the oil and cook the chicken, stirring 5 minute, remove and scrape the wok.

  4. Add remaining oil and cook the carrots and bok choy, until softened, 7 minutes. Add the cooked noodles and stir for 30 seconds. Add the ginger, scallions,and chicken; cook for 1 minute. Add the sauce and stir. Add the cornstarch paste, sitrring constandly and cook until the sauce thickens.
