This dish can easily be transformed into Teriyaki Scallop Noodles by replacing the chicken with uncooked scallops, which only needs to stir-fry for 2 minutes

Recipe Ingredients for Teriyaki Chicken Noodles

86 g noodles
4 tablespoons Japanese soy sauce
3 tablespoons mirin
1 teaspoons brown sugar
2 tbsp water
1 tsp vegetable oil
240 g chicken breast fillets, cut into bite-sized pieces
200 g carrots, julienned
400 g bok choy, roughly chopped
3 scallions, finely sliced on the diagonal
2 teaspoons finely grated ginger

Recipe Directions for Teriyaki Chicken Noodles

  1. COOK the noodles for 3 minutes then drain under cold water and set aside.

  2. MIX together the soy sauce, mirin, brown sugar and water in a bowl.

  3. HEAT a wok or large frying pan over a high heat, add 1 tablespoon of the oil and stir-fry the chicken for 5 minutes.

  4. REMOVE and set aside.

  5. SCRAPE the wok/frying pan clean.

  6. ADD the remaining oil and stir-fry the carrot and bok choy for 7 minutes.

  7. ADD the cooked somen noodles and stir-fry for 30 seconds.

  8. ADD the ginger, scallion and chicken and stir-fry for 1 minute.

  9. STIR through the sauce then, while stirring constantly, add the cornstarch paste until the sauce thickens.
