1 lb beef tenderloin, cut into 1" cubes 24 cherry tomatoes 2 lg green bell peppers 24 fresh whole mushrooms 1 lg red onion, cut into 1" wedges 1/4 cp olive oil 1/4 cp orange juice 1/4 cp soy sauce 1 clove garlic, minced 1 tsp ground ginger

Recipe Directions for Teriyaki Beef Kabobs

  1. Place meat and vegetables in a large plastic food bag.

  2. Combine oil, juice, soy sauce, garlic, and ginger in a small bowl; blend well. Pour marinade over meat and vegetables in bag; seal. Turn bag over to coat food well with marinade; refrigerate several hours, turning several times.

  3. Alternately thread meat, pepper, onion, mushroom, and tomato onto skewer 3 times.

  4. Grill or broil on med-high, turning once, until desired doneness. Makes 8 skewers.
