A delicious recipe from Every Day Food magazine. They are really big according to the recipe though - next time I will make them smaller, more appetizer size. As is, they are a full meal.

Recipe Ingredients for Teri's Everyday Food Spinach-Feta Turnovers

2 tbsp olive oil
2 medium onion
2 garlic cloves, minced
4 boxes spinach, frozen
6 oz feta, crumbled
4 tbsp lemon juice, fresh
1/8 tsp cayenne pepper
1 salt
1 pepper
1/4 egg
17 3/10 oz puff pastry

Recipe Directions for Teri's Everyday Food Spinach-Feta Turnovers

  1. Thaw spinach and squeeze out the moisture.

  2. Thaw puff pastry, but keep cold

  3. In a medium skillet heat oil and then sautee onions and garlic until tender, 5-7 minutes. Transfer to a large bowl and mix in spinach, feta, lemon juice and cayenne. Season filling with salt and pepper, then set aside.

  4. Preheat oven to 375F. On a lightly floured work surface, roll out each portion of dough into a 12" square; cut each into quarters to form 8 equal squares.

  5. Dividing evenly, spoon filling onto center of each square. Fold the edges over to form a triangle and press firmly to seal. With a floured fork, crimp edges.

  6. Transfer turnovers to baking sheet, brush tops with egg mixture (1 egg beaten with 2 tbsp water) for a golden glaze. Bake until golden and puffed, about 35-40 minutes, rotating baking sheet halfway through.
