stir fried salmon and leeks, with rice or noodles

Recipe Ingredients for teriaki salmon with crispy leeks

450 g salmon fillet
2 tbsp sweet soy sauce
2 tbsp tomato ketchup
1 tsp rice wine vinegar
1 tbsp demerara sugar
1 clove garlic
2 tbsp olive oil
450 g leeks

Recipe Directions for teriaki salmon with crispy leeks

  1. put salmon into slices and place in dish.

  2. mix soy, ketchup, vinegar, sugar and garlic and pour over the salmon, toss well to coat.

  3. cover and leave to marinate for 30mins or overnight in fridge.

  4. heat oil in wok and stir fry the leeks until crispy

  5. remove with slotted spoon and transfer to warm plates

  6. add more oil if necessary, add salmon and marinade and cook for 2 minutes

  7. spoon over the leeks and serve
