Family recipe, can be used with any kind of roast.

Recipe Ingredients for Tender Sunday Roast

1/2 cup balsamic vinegar
1/2 cup olive oil
1/2 cup soy sauce
4 tbsp paprika
3 cloves garlic
1 red onion
10 small white potatoes
1 1/2 pints water
2 lb beef, eye of round

Recipe Directions for Tender Sunday Roast

  1. Chop onions. Halve small white potatoes, leave skin on (if it suits you). Place roast in dish, surround with potatoes. Chop garlic and press it into the flesh of roast on top, sides, and bottom. Sprinkle paprika generously over potatoes. Pour balsamic vinegar, olive oil, and soy sauce very liberally over roast and potatoes. Place onions on top of roast and potatoes. Add 1 1/2 pints of water.

  2. Place covered in oven for 1hr at 200 degrees celsius. After 1hr remove and baste in its own juices, you may need to pour out some liquid. Place back in covered for another hour at 200. Remove, baste. Put back in for last 1/2 hour at 175 uncovered.
