Recipe Ingredients for tender greens quinoa salad

1 cup quinoa
1/2 cup dried cranberries
2 cups cucumber
2 cups beets
2 cups parsley
2 tablespoons olive oil
1/2 cup lemon juice
4 cups lettuce

Recipe Directions for tender greens quinoa salad

  1. cook quinoa according to package directions. cool when tender

  2. chop cucumber and beet (cooked, canned or raw- your preference)

  3. chop parsley and put in the blender with olive oil and lemon juice (salt and pepper to taste) blend until very green.

  4. toss everything together and chill until dinner time!
