Tender muffins, using either fresh or frozen blueberries.

Recipe Ingredients for Tender Blueberry Muffins

1/2 cup butter
1/2 cup shortening
1 cup sugar
1/2 cup lowfat milk
1/2 cup lowfat buttermilk
2 eggs
3 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 cups fresh blueberries

Recipe Directions for Tender Blueberry Muffins

  1. Cream butter & shortening together with sugar.

  2. Beat milks and eggs together; add to creamed mixture.

  3. Combine dry ingredients.

  4. Gently fold dry ingredients into creamed mixture, taking care not to overbeat.

  5. Use a little bit of flour to coat blueberries, then gently fold blueberries into the mix.

  6. Fill greased muffin tins 3/4 or more full.

  7. Bake in preheated 375 degree oven for 20-25 minutes.

  8. Gently trace around outside of baked muffins with a table knife as soon as they're removed from the oven to prevent sticking.

  9. This is a double batch, making about 21 good-sized normal muffins.
