1 T olive oil
1 medium onion
1 t minced garlic
1/2 bell pepper, diced
14 oz diced tomatoes
1 T cumin
4 oz green chilis
30 oz black beans
1 cup frozen corn
1/2 cup fat free sour cream

Recipe Directions for Ten-Serving Mexican Pasta

  1. Prepare pasta according to package directions.

  2. Saute onion, garlic, and bell pepper in olive oil.

  3. Add diced tomatoes, cumin, chilis, black beans, and corn; heat through.

  4. Pour over finished pasta and mix in sour cream until desired consistency is reached.
