Tempura is one of the simplest dishes, with a high "oooo"-to-effort ratio. This is a basic tempura process that can be used for everything: chicken, prawns, fish, and vegetables.

Recipe Ingredients for Tempura, Tres Simple

2 chicken breast
1 egg
1 cup water
1 cup flour
1/2 tsp salt
1 tbsp canola oil (you'll need enough for your deep fryer, but about this amount will end up in the dish)

Recipe Directions for Tempura, Tres Simple

  1. Place a small metal mixing bowl in a larger, ice-filled bowl, let the inner bowl chill.

  2. Prepare a cup of ice water.

  3. Place paper towels over a cooling rack.

  4. Place fry or candy thermometer in a large pot of oil. Place pot on burner at high heat.

  5. Slice chicken breasts across the grain, 1/4" thick. Lightly salt pieces. Pat dry.

  6. Lightly coat chicken pieces with flour, shake off excess.

  7. When oil reaches 375F, make first batch of batter.

  8. Lightly beat egg. Place half of the beaten egg into the chilled bowl, reserve other half.

  9. Add 1/2 cup ice water to bowl, stir briefly to barely mix.

  10. Add 1/2 cup flour to bowl, stir very briefly to partly mix. Leave lumps of dry flour in the batter.

  11. Dip chicken prices in batter, shake off excess, and fry until batter is just turning golden, about 2 minutes.

  12. Fry a few pieces at a time. Do not overcrowd the pot, let the pieces clump together in the oil, or let the oil drop below 350F.

  13. Remove pieces from pot, place on paper towels on cooling rack.

  14. If further salting is needed, do so immediately after placing pieces on paper towel.

  15. Serve immediately. Tempura, and other deep fried foods, lose their crispness quickly.

  16. After frying 1/2 the chicken pieces, discard batter, make the other half of the batter and continue.
