1 3/10 pounds turkey, ground
1 1/2 cups brown rice
24 ounces salsa
5 ounces cheddar cheese
1 onion, diced
1 green pepper
16 oz frozen vegetables, mixed
1 cup frozen corn
2 tablespoons chili powder

Recipe Directions for Tempe's Turkey/Rice/Cheese Chili Casserole

  1. thaw frozen vegetables

  2. saute turkey, onion, and green pepper in olive oil in a skillet

  3. add salsa and simmer for 5 minutes

  4. layer cooked turkey, hot cooked rice, cheese, and thawed vegetables, ending with a layer of cheese on top

  5. cook for 30 minutes at 350
