Recipe Ingredients for Tempeh and Veggies in Spicy Peanut Sauce

8 oz tempeh, cubed
1 c peanut butter
3 cloves garlic
4 c vegetable broth
1 fruit lime
1/2 tsp salt
1/2 tsp coriander
1/4 tsp chili powder
1/3 tsp cardamom
1/4 tsp cumin
1 red bell pepper, chopped
1 stalk broccoli, chopped
1 c carrots, chopped

Recipe Directions for Tempeh and Veggies in Spicy Peanut Sauce

  1. Steam the tempeh in a steamer basket for 10 minutes to remove some of the bitterness.

  2. Blend the sauce ingredients in a blender: peanut butter, garlic, broth, juice from 1/2 lime, salt, coriander, chili powder, cardamom, and cumin.

  3. Oil the crock of your slow cooker. Add the tempeh and sauce and cook on low for 6 to 8 hours.

  4. About 40 minutes before serving, add the vegetables and turn up the slow cooker to high. Add more water if needed, or if the sauce is too thin prop the lid up on the handle of a wooden spoon.

  5. Serve over rice, topped with cilantro and peanuts, with a lime wedge.
