Tempeh stir fry with carrots (add ginger, optionally).

Recipe Ingredients for Tempeh stir fry with carrots

2 1/2 cups uncooked jasmine rice
5 carrots
4 radishes
1 cup green onions
4 cloves garlic
4 cups spinach
16 ounces tempeh
1 tablespoon sesame oil
3 tablespoons rice vinegar
3 tablespoons soy sauce
1/4 teaspoon salt
1 tablespoon cornstarch
1 tablespoon vegetable oil

Recipe Directions for Tempeh stir fry with carrots

  1. Combine rice and 4 cups water in saucepan, bring to boil, then cover and simmer on low for 25 min until dry and fluffy.

  2. In pot or wok, add garlic, ginger (optional) vegetable oil, and veggies. Bring to medium heat until nearly tender veggies. Add tempeh, heat through. Add sesame oil and rice vinegar, and soy sauce. Add salt to taste.

  3. Serve with rice.
