Not quite a standard ratatouille (no eggplant, and garnish with salsa and cheese) but still, tasty.

Recipe Ingredients for Tempeh Ratatouille

8 ounces tempeh
1/2 cups black beans (dry then soak, or 15 oz can)
1 cup onion
1 cup green pepper
1 cup red pepper
6 cups zucchini (mix in yellow squash too)
3 tablespoons garlic
15 ounces tomatoes
2 cups shredded cheddar cheese
1/2 cup salsa
2 teaspoons olive oil

Recipe Directions for Tempeh Ratatouille

Chop and saute everything except salsa and cheese in a pot over medium heat (chop tempeh into small pieces). Salt to taste. Serve, topped with dabs of salsa and cheese to taste.
