Recipe Ingredients for Tempeh Fajitas

1 tablespoons olive oil
8 ounce tempeh, cubed
2 tablespoons low sodium soy sauce
1 tablespoon lime juice
1 1/2 cups chopped green bell pepper
8 oz baby portobella mushrooms, fresh, sliced
1/2 cup frozen chopped spinach, thawed, drained
1 tablespoon serano chile, chopped
1 tomato, chopped
1 tablespoon fresh cilantro, chopped
1 onion, thinly sliced

Recipe Directions for Tempeh Fajitas

  1. You can cut the tempeh in half first, and bring to boil in small amount veggie broth (then lower heat & simmer 30 minutes) if you find it bitter, or wish to impart more flavor.

  2. Heat oil in a large skillet over medium heat. Saute tempeh with soy sauce and lime juice until tempeh browns.

  3. Stir in bell peppers, mushrooms, spinach, tomatoes, chile peppers, cilantro and dried onion.

  4. Increase heat to medium-high and cook until fluids have reduced, stirring occasionally.

  5. Wrap in a tortilla and serve.
