Recipe Ingredients for Tempeh Curry (vegan)

8 oz tempeh, cubed
2 roma tomatoes, chopped
1 small onion, sliced
1/2 cup chopped red bell pepper
1 tsp ginger root, fresh grated
1 tbsp curry powder
1/2 tsp ground cumin
12 oz Organic Coconut Milk
1 fruit+2"+dia lime
1 mango, seeded, peeled, cubed
1 tbsp cilantro, fresh chopped
1 spray Non Stick Cooking Spray Original

Recipe Directions for Tempeh Curry (vegan)

  1. Coat large nonstick skillet with cooking spray. Heat over med-high heat 1 min. Add tempeh; cook 5 min. or until brown on all sides. Set aside.

  2. Return skillet to med-high heat and re-coat with cooking spray. Add tomatoes; cook until softened. Add onions and bell pepper; cook and stir 5 min. or until soft. Stir in ginger, curry, cumin, and pepper to taste.

  3. 3. Add coconut milk, lime juice, zest and mango; stir to combine. Simmer 5 min. or until mango is slightly softened. Add tempeh; cook and stir until heated through. Sprinkle with cilantro, and serve.
