Recipe Ingredients for Tea's Vegan Quinoa Medley

1 cup Quinoa
16 oz Spinach
19 oz Unico Chick Peas
12 oz Portobello Mushrooms
2 tbsp chopped Shallots
1/2 cup slices Cucumber
2 serving Extra Virgin Olive Oil
1/2 medium red pepper

Recipe Directions for Tea's Vegan Quinoa Medley

  1. Cook Quinoa according to package directions

  2. In Vitamix, puree 3 cups spinach, cucumber, red pepper and shallot

  3. Sautee chick peas with 1 tbsp of olive oil and 1 tsp curry

  4. Sautee 2 cups portobello mushrooms in 2 tbsp of olive oil

  5. Assembly:

  6. On individual serving plates or pie plate

  7. Spread quinoa

  8. Spread spinach mixture over quinoa

  9. Spread chick pea mixture over spinach

  10. spread mushroom mixture over spinach
