Recipe Ingredients for Tea Biscuits

2 cups flour
4 tsp baking powder
1 tsp salt
1/3 cup margarine
1 cup 1 % milk

Recipe Directions for Tea Biscuits

  1. Preheat oven to 450F (400F for dark pans)

  2. Combine dry ingredients in a large mixing bowl. Cut in margarine (or shorting) using a pastry blender until mixture looks crumbly / no large chunks remaining.

  3. Add milk gradually while stirring mixture with a fork. Gently kneed into a soft dough, no more than a minute or two (over kneading will cause biscuits to be tough and doughy).

  4. Turn Dough out onto lightly floured board. Pat into sheet or roll as with pastry, about 1/2 - 2/4' thick. Cut into rounds (cookie cutter) or squares (lazy, knife, my choice). scraps can be re-rolled and cut again.

  5. place biscuits on baking sheet and bake 12-15 minutes until tops start to brown, insides should be light and flaky. If doughy, return to oven for a few minutes more.

  6. Serve hot with butter or preserves of choice. Makes 15-18 biscuits.
