Recipe Ingredients for Tasty & Healthy Veggie Frittata

1 cooking spray
2 cups chopped zucchini
2 cups chopped fresh mushrooms
1 cup chopped onion
1 cup chopped red bell pepper
1 teaspoon garlic powder
6 eggs, beaten
1 1/2 cups 100% liquid egg whites
1/2 cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
16 ounce low fat cottage cheese
2 cups shredded low-fat cheddar cheese

Recipe Directions for Tasty & Healthy Veggie Frittata

  1. Lightly spray a large skillet or frying pan with cooking spray and heat over medium high heat. Add zucchini, mushrooms, onion, red pepper and garlic powder; saute until tender. Remove from heat and let cool slightly.

  2. Preheat oven to 400 degrees F (200 degrees C). Lightly spray two 9" round pie pans with cooking spray.

  3. In a large bowl, lightly beat eggs and liquid egg whites. Add flour, baking powder and salt, mixing well. Stir in the sauteed vegetables, cottage cheese and cheddar cheese. Divide egg mixture into the prepared baking dishes.

  4. Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking for 35 to 40 minutes. Cool slightly, and cut each frittata into 6 wedges.
