These are pretty tasty gluten free pancakes that have the weight and texture of a wheat based pancake.

Recipe Ingredients for Tasty Gluten Free Pancakes

1/2 cup Oat Flour
1/2 cup Gluten Free Sweet White Sorghum Flour
1/2 cup Tapioca Flour
1/2 cup Almond Meal/Flour
1/2 cup Milk Powder (Non-Fat Dry)
1 large Egg, Whole
1 tsp Salt
1 1/2 teaspoon Baking Powder
1 1/2 cup (8 fl oz) Water
1 tsp Vanilla Extract
1 tsp Cinnamon, Ground
1 tsp Xanthan Gum

Recipe Directions for Tasty Gluten Free Pancakes

  1. In a large bowl, mix all dry ingredients until incorporated.

  2. Add beaten egg and vanilla and as much water as necessary to make a batter. The batter may be a bit sticky.

  3. Use a heavy non stick skillet that's been sprayed with cooking oil spray, and place over medium high heat.

  4. When pan is hot, spoon batter into pan and smooth into a circle.

  5. Cook on first side until golden brown, then flip over and cook the rest of the way through on the second side.

  6. Serve topped with fresh fruit or preserves, or the syrup of your choice.
