Recipe Ingredients for Tassajara Bread


Sponge:
1 1/2 cup water, lukewarm
1 1/2 tablespoon dry yeast
1/4 cup honey
1 cup dry milk
1 cup wholewheat flour
1 cup unbleached flour

Dough:
1 teaspoon salt
1/4 cup oil
1/2 cup wholewheat flour
1 cup unbleached flour
1/2 cup whole wheat flour for kneading

Recipe Directions for Tassajara Bread

  1. To create the sponge, mix 1 1/2 cups water (85 - 105 degrees F) in a large bowl. Sprinkle the dry yeast over the water and stir to dissolve. Add 1/4 cup honey, 1 cup dry milk and flour (one cup at a time) stirring briskly to dissolve. Once all flour has been added, the mixture will be a thick mud.

  2. Beat the mixture 100 times until very smooth with a large wooden spoon. cove bowl with damp towel, set in warmish place to allow the mixture to rise for 45 minutes.

  3. To create the dough, fold in (do not stir) 1 teaspoon salt and 1/4 cup oil. Fold toward the center of the bowl. Sprinkle remaining flour on top of the dough 1/2 cup at a time folding into center of bowl. Dough should pull away from center of bowl when all flour has been added.

  4. Turn dough out of bowl on to a well-floured surface. Knead in the following manner: picking up the far edge of the dough, fold the dough in half toward you, far side over near side, so that the two edges are lined up evenly. Push down and forward with the heels of your hands. Apply stead even pressure. Turn dough 1/4 turn and knead again taking care not to tear the dough. Continue kneading until mixture is smooth.

  5. Place dough in oiled bowl with seam-side down. Ensure top-side is oiled too. Cover bowl with damp towel and set in warm place.

  6. Let dough rise 50-60 minutes, until double in size. Punch down 15-20 times. Cover and allow to rise again (50-60 minutes)

  7. Turn dough out onto board and shape dough into ball by folding it to the center all the way around as in kneading without the pushing. Do this 5-6 times until the dough is compact.

  8. Put dough into oiled pan with seam-side up. Dough should fill pan 1/2 - 2/3 full. Flatten dough with the backs of your fingers. Cover and let rise 15-20 minutes.

  9. Preheat oven to 350 degrees. Cut the top 1/2 inch deep with knife. Bake 50-60 minutes (smaller loaves will cook faster). Immediately remove from pans and allow to cool 1 hour before slicing.
