Simple to make tarts with a rich cream cheese crust, chocolate filling and fruit topping that seems decadent, but isn't! You can use any fruit as a final garnish, but I am biased toward raspberries and blueberries. I used whole wheat flour, 39% smart balance, light cream cheese and reduced fat sour cream, so keep in mind that the nutritional facts were computed using those products, any variation will change the stats! Recipe Ingredients for tarts


Filling:
8 ounces (227 grams) cream cheese, room temperature
4 ounces (113 grams) white chocolate, chopped and melted
1/4 cup sour cream

Crust:
3 ounces cream cheese, softened
1/2 cup butter, softened
1 cup all-purpose flour

garnish:
1/2 cup blueberries
1 cup raspberries

Recipe Directions for tarts

  1. Crust: Blend cream cheese and butter or margarine. Stir in flour just until blended. Chill about 1 hour. This can be made ahead and chilled for up to 24 hours.

  2. Preheat oven to 325 degrees F (165 degrees C).

  3. Shape dough into 24 one-inch balls and press into ungreased 1 1/2 inch muffin cups (mini-muffin size) to make a shallow shell.

  4. Bake for 20 minutes , or until light brown.

  5. Filling: Melt the chopped chocolate in a heatproof bowl over a saucepan of simmering water. Watch carefully as white chocolate scorches very easily.

  6. Remove from heat and set aside.

  7. In a large bowl, beat the cream cheese until fluffy and smooth (about 2 - 3 minutes).

  8. Add the melted white chocolate and then the sour cream, beating until you have a creamy smooth mixture.

  9. Evenly divide the cream among the tart shells smoothing the tops with the back of a spoon or an offset spatula.

  10. Cover and chill in refrigerator.

  11. To serve: top with garnish

  12. Note: You can make and refrigerate the filling a few days in advance but to prevent the crust from softening, do not assemble the tarts until the day they are being served.
