Recipe Ingredients for Tarragon Veggie Soup

6 servings better than bouillon, chicken
7 cups of hot water
6 potatoes, chunked
1 T butter
2 onions, chunked
10 oz frozen broccoli
10 oz frozen corn
10 oz frozen green beans
2 cloves garlic, minced
2 T dried tarragon

Recipe Directions for Tarragon Veggie Soup

  1. have everything chopped and ready before you start.

  2. saute the onion and garlic with the butter in a large skillet and sweat. Add whatever various spices that you like. I personally like tarragon, cayenne and black pepper.

  3. In a large crock pot, toss in the potatoes and onion mixture.

  4. Add bouillon that has been dissolved in the water.

  5. Cook on High for 6-8 hours in crock pot.

  6. Add frozen veggies and cook for approx 1 hour more.

  7. Serve with your favorite crusty bread or use a half portion as a side dish.
