Tarragon risotto with sea scallops

Recipe Ingredients for Tarragon Risotto

12 large sea scallops
1 1/2 cup arborio rice
6 cup chicken stock
1/4 cup Parmesan cheese
4 tbsp unsalted butter
2 tbsp shallots
2 tbsp lemon juice
2 tbsp fresh tarragon
2 tbsp parsley
1 tbsp olive oil

Recipe Directions for Tarragon Risotto

  1. DIRECTIONS

  2. 1. To make risotto, bring chicken stock to a simmer and remove from heat.

  3. 2. In a large heavy pot melt 2 tbsp (30 ml) butter and oil over medium heat. Add shallots and sauté until translucent but not brown. Add rice and stir until glazed.

  4. 3. Add stock, 1/2 cup (125 ml) at a time, stirring until stock is absorbed and rice is creamy yet firm to the bite. You may not need all the stock.

  5. 4. Stir in lemon juice, cheese, herbs and salt to taste. Cover to keep warm.

  6. 5. Heat remaining 2 tbsp (30 ml) butter in a small skillet. Pat scallops dry. Add to skillet 2 at a time and sear for 45 to 60 seconds or until golden and flesh is opaque.

  7. 6. Remove to a warm plate and repeat with remaining scallops.

  8. 7. Serve risotto with a drizzle of olive oil and scallops on top. Garnish with tarragon and serve immediately.
