Makes 1 serving



Bulgarian cold cucumber soup. This is for one serving, but we usually just make a bowl using one cucumber and about 350mL (1/2 container) plain yogurt. Everything else is guesstimated to taste.

Recipe Ingredients for Tarator

100 ml plain yogurt
80 ml water
0.14 medium cucumber
1/2 tsp olive oil
1/2 tsp salt
1/4 clove garlic
1/3 tsp dill

Recipe Directions for Tarator

  1. Cut cucumbers to small cubes. Add salt and mix well.

  2. Add the dill and garlic. Pour the olive oil on top.

  3. Mix the yogurt until smooth. Pour over the rest and add the water. Stir well.

  4. You can also add walnuts to this - just cut them into small pieces or use a grinder / grater.
