This tapioca receipe uses soy milk, egg beaters and far less sugar than the typical recipe.

Recipe Ingredients for Tapioca-Soy milk, less sugar and Egg Beaters

2 1/2 cup soy milk
3 tbsp tapioca
1/4 cup Egg Beaters
4 tbsp sugar
1 tbsp vanilla

Recipe Directions for Tapioca-Soy milk, less sugar and Egg Beaters

  1. Add first 4 ingredients to sauce pan.

  2. Mix and let stand 5 minutes.

  3. Turn heat on (medium) and bring to a rolling boil, stir constantly.

  4. Remove from heat, add vanilla.

  5. Let stand 20 minutes to serve warm.
