Tapioca Pudding Recipe

Old Fashioned Recipe for tapioca pudding. Serve with fresh fruit - sliced peaches or strawberries are good options. I use Ideal brand Xylitol in place of sugar to cut calories and carbohydrates down.

Recipe Ingredients for Tapioca Pudding

1/3 cup sugar
3 tbsp. MINUTE tapioca
2 3/4 cups whole milk
1 egg, well beaten
1 tsp. vanilla

Recipe Directions for Tapioca Pudding

  1. Mix sugar, tapioca, milk and egg in medium saucepan; let stand 5 minutes.

  2. Cook on medium heat, stirring constantly, until mixture comes to FULL boil (a boil that doesn't stop bubbling when stirred). Remove from heat. Stir in vanilla. Pudding thickens as it cools.

  3. Cool 20 minutes; stir. Serve warm or chilled. Store leftover pudding in refrigerator.

  4. NOTE: for creamier pudding, place plastic wrap on surface of pudding while cooling. For best results, use 2% reduced fat or whole milk. Fat free, 1% lowfat or lactose-reduced milk may also be used, but results will be different.

  5. Microwave preparation: Prepare as directed above in large microwavable bowl. Microwave on HIGH 10 - 12 minutes until mixture comes to full boil, stirring every 2-3 minutes.

  6. VARIATION: Chocolate: Increase sugar to 1/2 cup and milk to 3 cups. Add 3 squares semi-sweet baking chocolate to saucepan before cooking.
