A tasty vegan version of this dessert. Inspired by a recipe found on http://thaifood.about.com, it can be served cold or warm.

Recipe Ingredients for Tapioca Mango Pudding

1 cup tapioca ("seed" type preferred)
4 cups water
1 tsp salt
1 can coconut milk
4 tbsp maple syrup
2 mangos

Recipe Directions for Tapioca Mango Pudding

  1. Place 1 cup tapioca in a pot and cover with 2 cups of water. Allow to soak for 10 minutes.

  2. After 10 minutes, the tapioca will have absorbed much of the water. Add another 2 cups water (a little more if necessary), plus 1 tsp salt. Put the pot on medium-high heat.

  3. Stir well; bring to a boil. Reduce heat to medium and continue cooking for 12-15 minutes, stirring occasionally to keep tapioca from sticking. If it is too thick to cook easily, add a little more water.

  4. After 15 minutes, most of the tapioca seeds will be translucent. Remove pot from heat and cover with a lid. Let sit until tapioca is warm (not hot) - 10 to 30 minutes. Any remaining tapioca that are hard will soften.

  5. Serve in bowls with 1 tbsp maple syrup drizzled over the top of each one. Add chopped mango pieces or other tropical fruit. Add a generous amount of coconut milk (3 tbsp to 1/4 cup per portion). Stir and enjoy!
