Yummy gluten free version of an acini di pepe salad

Recipe Ingredients for Tapioca di Pepe

11 oz mandarin oranges
8 oz tapioca
20 oz pineapple, crushed
8 oz cool whip
6 oz maraschino cherries
3/4 c sugar
3 tbs rice flour, white
3 eggs, beaten

Recipe Directions for Tapioca di Pepe

  1. Cook tapioca and drain.

  2. Drain fruit and save juice of oranges and pineapple, putting it into a saucepan.

  3. Add sugar, flour, and eggs to juice.

  4. Cook until thick.

  5. Add sauce and fruit to tapioca.

  6. Refrigerate overnight.

  7. Next day add cool whip & cherries.
