This is my own creation. Soooo sinfully good.

Recipe Ingredients for Tania's Rice Pudding (Arroz con Leche)

2 cups rice
2 cups water
3 tbsp margarine, soft
3 cups milk
1 cup sugar
1 egg white
2 tsp vanilla extract (or 1 vanilla bean)
2 tbsp cinnamon (or 4-5 cinnamon sticks)
1 tsp salt

Recipe Directions for Tania's Rice Pudding (Arroz con Leche)

  1. Soak rice for at least one hour then rinse thoroughly.

  2. Cook rice in water and margarine until water is fully absorbed. Careful not to burn the rice.

  3. In a bowl, whisk together the milk and egg white. Add mixture to rice along with sugar, salt, vanilla (extract or bean), and cinnamon (only if using cinnamon sticks.)

  4. Let simmer on low heat for 25-35 minutes. Serve sprinkled with cinnamon, whipped cream, or a cinnamon stick. Add raisins if desired.
