Reduced fat version of my other PB&J muffin

Recipe Ingredients for Tania's Peanut Butter & Jelly (PB & J) Muffins (Reduced-Fat)

2 cups all-purpose flour
1/2 cup sugar
2 1/2 tsp baking powder
1/2 tsp Salt
3/4 cup crunchy peanut butter
3/4 cup milk
2 eggs
1/4 cup grape jelly

Recipe Directions for Tania's Peanut Butter & Jelly (PB & J) Muffins (Reduced-Fat)

  1. Preheat oven to 400 degrees.

  2. Combine flour, sugar, baking powder, and salt in a mixing bowl. Cut in peanut butter with two knives or a pastry blender until mixture resembles coarse crumbs. Add milk and eggs all at once, stirring just until flour is moistened.

  3. Place 2 tablespoons of the batter in greased, fluted, or plain muffin cups. Place 1 teaspoon of preserves in center of batter and top with 2 tablespoons more batter. Repeat, making 12 muffins.

  4. Bake in a 400 degree oven for 15-17 minutes.
