Recipe Ingredients for Tania's Low Fat Banana Crunch Muffins

3 cups wheat flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, melted and cooled
2/3 cup egg substitute
3/4 cup low fat milk
2 teaspoons pure vanilla extract
2 medium bananas, mashed (about 1 cup)
1 medium banana, diced
3/4 cup chopped walnuts
1/2 cup granola
3/4 cup shredded sweetened coconut
2/3 cup granola
3/4 cup brown sugar

Recipe Directions for Tania's Low Fat Banana Crunch Muffins

  1. Preheat the oven to 350 degrees.

  2. Line 24 small muffin cups with paper liners.

  3. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend.

  4. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.

  5. Fold the diced bananas, walnuts, granola, and coconut into the batter.

  6. Spoon the batter into the paper liners, filling each 1 to the top. For topping, toss crushed banana chips and brown sugar then sprinkle over tops of muffins.

  7. Bake for 15 to 20 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.
