These are the potatoes I use in my breakfast burritos.

3 medium potatoes
1 tbsp light margarine
1/2 tbsp canola oil
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/4 tsp paprika

Recipe Directions for Tania's Breakfast Potatoes (breakfast burrito serving size)

  1. Dice potatoes into 3/4-inch cubes. Melt margarine in microwave and mix in oil. In a bowl, toss the potatoes with the margarine/oil mixture then sprinkle on the seasonings and toss to coat evenly.

  2. Spray a baking sheet with butter-flavored cooking spray. Bake in 375-degree oven for 20-25 minutes, or until crispy and golden brown.

  3. When the potatoes have cooled I store these in individual servings and freeze them to add to breakfast burritos.
