I actually divided this recipe into 9 hearty servings. You would never know this is low cal. The whole wheat spaghetti and canned whole tomatoes are essential to keeping down the sodium and cals.

Recipe Ingredients for Tania's Beefy Cheesy Spaghetti (Low-Cal, Grade A-)

24 oz dry whole wheat spaghetti
1 tablespoon olive oil
1 tbsp canola oil
1 tbsp margarine
1/2 cup white wine
1/2 lb ground beef
1/2 medium onion, chopped
4 cloves garlic, chopped
1/3 cup chopped bell pepper
1 small tomato, chopped
2 tbsp chopped parsley
1 tbsp chopped rosemary
1 tbsp chopped basil
1 tsp chopped sage
1/2 tsp garlic powder
1 tsp salt
1 tsp pepper
7 oz whole tomatoes, canned
16 oz marinara sauce
1 cup shredded mozzarella cheese
2 tbsp grated parmesan cheese

Recipe Directions for Tania's Beefy Cheesy Spaghetti (Low-Cal, Grade A-)

  1. Put water boiling in a large pot for pasta.

  2. In a medium bowl mix together beef, olive oil, garlic powder, salt, pepper, and 1/3 of the herbs.

  3. When water is boiling, add pasta and a pinch of salt.

  4. In a large skillet heat canola oil and margarine over medium heat. Add onions and peppers to skillet and saute until tender. Add garlic and saute until garlic becomes fragrant. Add beef mixture and saute until browned. Add white wine and simmer until wine is reduced by half, or about 5 minutes. Add fresh chopped tomato and canned whole tomato. Break up whole tomatoes with a wooden spoon then add one jar of marinara sauce. Let sauce simmer about 8-10 minutes.

  5. Drain pasta and return to pot. Add sauce, the rest of the herbs, mozzarella, and parmesan cheese to pasta in pot and stir well.
