These are great over mashed potatoes or yolk free ribbon noodles. Or, make a big batch and serve as an appetizer at a party.

Recipe Ingredients for Tangy Veggie Meatballs

14 oz
1 c bread crumbs
1/4 c egg beaters
1/2 tsp garlic salt
1/2 tsp oregano
1/4 tsp basil
16 oz tomato sauce
16 oz cranberry sauce
1 tbs mustard
3 tbs apple cider vinegar
1/4 c red wine
1 tbs horseradish
1 1/2 tbs oil

Recipe Directions for Tangy Veggie Meatballs

  1. Meatballs:

  2. Combine Gimme Lean Ground "Beef", bread crumbs, egg beaters, garlic salt, oregano, and basil until thoroughly combined. Place in the refrigerator for 10-20 minutes to firm up. Next, roll into balls using about one tablespoon of mixture. Heat oil in a large, deep frying pan or skill and cook until lightly brown (this doesn't take long). Remove meatballs from pan and drain on paper towels. Discard any remaining oil. Return meatballs to the pan. Pour sauce (recipe follows) over meatballs and cover. Simmer on low for 10-15 minutes. Serve with mashed potatoes or yolk free ribbon noodles.

  3. Sauce:

  4. Combine tomato sauce, cranberry sauce, mustard, apple cider vinegar, wine, and horseradish in a sauce pan. Simmer on low heat, stirring often, for 10 minutes.
