Recipe Ingredients for Tangy Vegetarian Chili

2 small onions,
1 green peppers,
4 small mushrooms
2 tbsp olive oil
5 tbsp chili powder
2 tbsp cumin
2 tbsp oregano
29 oz diced tomatoes
2 tbsp garlic powder
1 tsp cinnamon
15 1/2 oz red beans, canned
1/2 cup whole wheat couscous
6 oz pizza sauce
4 oz lemon juice
4 oz orange juice
4 oz water
2 tsp salt
1/4 cup splenda

Recipe Directions for Tangy Vegetarian Chili

  1. saute onion, mushroom and pepper in oil in a large pot

  2. add chili powder once. Cook 2-3 minutes

  3. Add canned tomatoes, pizza sauce cumin oregano, garlic powder and cinnamon. Simmer for a few minutes, scraping the bottom of the pot.

  4. Add beans and couscous, simmer for a few minutes.

  5. Add juices and water and bring to a simmer. Simmer for 15-20 minutes.(after this point, if you prefer a thicker chili, take out some of the excess liquid with a ladle)

  6. Add salt and splenda. Simmer for 5 minutes.
