Apple and turkey give this vegetable heavy meal added substance and sweetness. The almonds add a bit of healthy fat to satiate the palate as well as the belly. This is a great stand alone lunch or a light supper.

Recipe Ingredients for Tangy Turkey Salad

8 cups romaine, torn
1/4 red onion, chopped
2 carrots, grated
1 cup celery chopped
1 fuji apple, chopped
2 tbsp slivered almonds, toasted
8 oz turkey breast, diced
2 tbsp balsamic vinegar
1/2 tbsp extra virgin olive oil

Recipe Directions for Tangy Turkey Salad

  1. In a large bowl mix the oil and vinegar with a whisk.

  2. Throw in the romaine first then add the remaining ingredients.

  3. Toss vigorously to coat everything with a bit of the dressing.

  4. Serve on large dinner plates heaped up like a mountain with fresh goodness!
