Recipe Ingredients for Tangy Edamame with Squash and Tomatoes

2 c water
2 c Edamame
1 large onion, chopped
2 tsp olive oil
3 c or 3 summer squash, thinly sliced
1 tsp dried thyme
1/2 tsp dried dill
2 tomatoes, chopped
1 juice of 1 lemon [9152] lemon+yields lemon yields lemon juice
1/2 oz or 1/3 c goat cheese

Recipe Directions for Tangy Edamame with Squash and Tomatoes

Bring the water to a boil in a saucepan and add the frozen edamame. Cook until tender as per package instructions. in the meantime, saute the onions in the oil in a large skillet until translucent. Add the squash, thyme, and dill and continue to saute for 2-3 minutes. Add the tomatoes. When the edamame are tender, drain them and stir into the sauteing vegetables along with the lemon juice and goat cheese. Cook until the goat cheese begins to soften, and serve immediately.
