This is a reformed and simplified version of the Stuffed Zucchini recipe on veganagogo.com. Check it out! This is an incredibly quick, simple recipe that will fill you up, provide a great deal of protein, and help you include a vegetable in your day as well as the health benefits of garlic. Feel free to add onions if desired. Also, use as much lemon juice as you like. It's only 3 calories per tablespoon! I suggest this to be cooked as a dinner for one, but can be shared between two people as a snack! Enjoy!

Recipe Ingredients for Tangy Chickpeas and Zucchini

1 1/2 cups garbanzo beans canned
1 tbsp lemon juice bottled or canned
2 cloves garlic
1 medium zucchini

Recipe Directions for Tangy Chickpeas and Zucchini

  1. Add as much ground coriander and cumin as you like, and salt to taste.

  2. Warm your pan to medium-high heat.

  3. Cut the zucchini into small pieces any way you like.

  4. Drain your can of garbanzo beans and combine both zucchini and beans in pan.

  5. Meanwhile, mince your garlic into fine pieces and add to mixture.

  6. Pour half a tablespoon of lemon juice into the pan and add spices as desired.

  7. Allow to cook until zucchini is soft and the skins of the garbanzo beans are slightly tough and falling off.

  8. Then add the other half tablespoon of lemon juice to the pan and cook for just a minute.

  9. Now, it is ready to eat!
