Recipe Ingredients for Tangy Chicken

1 1/2 pounds boneless chicken breast, cubed
3 tsp. canola oil
3/4 cup chopped onion
1 cup unsweetened pineapple chunks
6 tbsp. reduced sodium soy sauce
3 tbsp. ketchup
3 tsp. brown sugar
3/4 cup chopped tomato
1 tbsp. minced fresh parsley

Recipe Directions for Tangy Chicken

  1. In a large non-stick skillet, cook chicken in 1 tsp. oil for 5 - 10 minutes or until no longer pink.

  2. In the same skillet, saute onion in remaining oil until tender.

  3. Add the pineapple, soy sauce, ketchup, and brown sugar; bring to a boil.

  4. Reduce heat; simmer, uncovered, for 5 minutes.

  5. Add the tomato, simmer 5 minutes longer.

  6. Return chicken to pan, sprinkle with parsley.

  7. Cook for 2 - 3 minutes or until heated through.

  8. Serve over rice if desired.
