Tangy Carrot salad - this is wonderful with BBQ'd chicken or beef. Very quick and simple to make for a large or small n° of guests.

Recipe Ingredients for Tangy Carrot Salad

8 carrots
1 tablespoon mustard seed
1 tablespoon cumin
1 tablespoon lemon juice
1 tablespoon olive oil

Recipe Directions for Tangy Carrot Salad

  1. Grate the carrots and place in a salad bowl.

  2. Heat the oil and add the cumin seeds and then add the mustard seeds. When the mustard seeds start popping (within 30 seconds or so) - remove from heat and allow to cool.

  3. When the seeds and oil are cool, pour it over the grated carrots.

  4. Add the freshly squeezed lemon juice according to your taste. You can also add some cracked pepper if you like.

  5. Mix up and serve.
