Recipe Ingredients for Tangy Carrot Coins

1/2 pound carrots, sliced
1 1/2 tablespoons margarine
1/2 tablespoon brown sugar
1/2 tablespoon Dijon mustard
1 dash salt

Recipe Directions for Tangy Carrot Coins

  1. Place carrots in a large saucepan. Add 1 in. of water; bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until crisp-tender. Drain. Add remaining, ingredients; cook and stir over medium heat for 1-2 minutes or until sauce is thickened and carrots are coated.

  2. Yield: 2 servings. Prep/Total Time: 20 min
