Recipe Ingredients for Tangy Bean Salad Wrap

4 whole wheat tortillas
15 ounce black beans, rinsed, drained, and slightly mashed
1/2 cup chopped green sweet pepper, seeded and finely chopped
2 tablespoons snipped fresh cilantro
1/3 cup vegenaise
1 tablespoon lime juice
4 leaf lettuce

Recipe Directions for Tangy Bean Salad Wrap

  1. Wrap tortillas in foil. Heat in a 350 oven for 10 minutes to soften. (Or, wrap tortillas in microwave-safe paper towels. Microwave on high for 30 seconds.)

  2. Meanwhile, in a medium bowl combine black beans, sweet pepper, and cilantro. Stir in light mayonnaise dressing and lime juice. To serve, spread mixture evenly over tortillas. Top with lettuce leaves. Roll up tortillas.
