Sweet and savory chicken marinade

Recipe Ingredients for Tangerine Teriyaki Chicken

1/2 tsp grated orange zest (or tangerine)
1 c fresh orange juice (or tangerine)
1/2 c mirin
1/4 c low sodium soy sauce
2 tbs brown sugar, packed
1 tbs sugar
2 tsp ginger root, peeled & grated
1/2 tsp garlic, chopped
1 tsp cornstarch
1 tsp water
4 chicken thighs

Recipe Directions for Tangerine Teriyaki Chicken

  1. In a small saucepan over medium heat, combine zest and juice with mirin, soy, sugars, ginger and garlic. Bring to a simmer and cook, stirring often, until reduced by half (about 10 minutes).

  2. Mix cornstarch and water to form a paste. Whisk the mixture into the simmering sauce and cook, stirring, until sauce is consistency of maple syrup. Remove from heat, pour about 1/4 of the sauce into a bowl and set aside.

  3. Turn on broiler; line broiler pan with foil.

  4. Pat chicken dry. Trim visible fat. Marinate in sauce for as long as you like. Broil chicken 8 minutes a side, basting frequently.

  5. Drizzle with reserved sauce; serve immediately.
